Jeffrey Kim
Chef and co- founder of nudibranch Jeff Kim was born and raised on Long Island. He started his journey in the industry as a busser at Momofuku Ssam Bar and wine intern at Momofuku Ko, this experience solidified his love of gastronomy and people and enrolled at the International Culinary Center to further his career. He later went on to join the kitchen teams as a line cook at, Atoboy, Eleven Madison Park, Jua, and Spain’s El Celler de Can Roca.
Matthew Lee
Chef and co- founder of nudibranch, Matthew Lee was born in South Korea and grew up in the Washington D.C Metropolitan Area. A graduate of CIA Napa Valley, he began his career as a line cook at Joule in Seattle. Inspired, he moved his talents to New York City and joined the kitchen teams at Jungsik, Momofuku Ko, and Jua. His spirit animal is a capybara and consistently lives with the mantra: “to do good”
