From Portland Oregon Chef Joshua has spent his life cooking in many of Portland’s top restaurants, working for James Beard award winning chefs and multiple “best new restaurants” such as Laurelhurst Market and Little Bird. While in Portland, Josh used to daydream about working in New York. One day he quit his job and bought a one way plane ticket to NYC. While in NY Chef seven plus years at restaurants such as Grant Atchatz’s The Aviary and Otway. Chef Josh’s menu at Heirloom is very seasonally and technique driven. Josh would like to see Heirloom @ The St.Laurent not just be considered one of the top restaurants in New Jersey, but one of the best new restaurants in the country. Long term he would like St.Laurent to be viewed as a highly respected restaurant in the industry and a culinary destination.
