Nicolas Geeraerts learned the art of hospitality at an early age, working in his family’s restaurant in Belgium and during his extensive travels.
In 2004, Nicolas moved to New York to further pursue his career in hospitality, working alongside renowned chefs/operators such as Patina Group, Jean Georges, Gray Kunz, Todd English, Tony May and One Group.
In 2015, Nicolas became operating partner in “Giuliani Social” and opened the successful food hall The Pennsy, which revitalized the Penn Station area. Additionally, he introduced the innovative food-truck park pop-up “Shipping and Receiving.”

Most recently Nicolas joined John Fraser as COO and Partner, overseeing all operations and growth for the Michelin-starred chef.

Beyond his work with Fraser, Nicolas began his own culinary project, opening Tulum Tacos & Tequila in Mineola six months ago. Inspired by the captivating beauty of his travels throughout South America and Mexico, Tulum Tacos & Tequila embodies a bohemian chic vibe that has quickly become a force to be reckoned with. With plans for additional locations underway, the brand’s success continues to soar.

Beyond his professional endeavors, Nicolas is an avid traveler, fluent in five languages, enjoys skiing, mixed martial arts, and spending time with friends and family.
