Despite having an undergrad degree in Applied Physics and a Master’s Degree in Information Technology, Pibool quit his corporate job in Atlanta to pursue his dreams of introducing more Thai culture to the United States.

In 2016, he created an ice cream concoction called Mango Sticky Rice Ice Cream at I-CE-NY Atlanta, where he serves warm coconut milk-infused sticky rice with mango ice cream. Since then the ice cream has made its way to the “Top 100 dishes to try in Atlanta” by Creative Loafing, appeared in several magazines as well as gained hundreds of thousands of views of its
videos on Instagram.

In 2020 during the pandemic, he opened Thai Restaurant Three Rosters, with his highschool best friends, which Eater New York explains as “dedicated — or perhaps obsessed — with three distinct poultry preparations: fatty lemongrass grilled chicken, Hainanese chicken rice and an airy breed of fried chicken showered in a puckery, lime-y powder (Zab Seasoning).” Because of the focused menu, the restaurant quickly grabbed attention from Hell’s Kitchen locals and media in NYC.
